Mini Chicken Keema Kebabs

Sorry, i have been MIA for a while due to bad health, but hopefully i am back now with some more recipes!!

Today i am bringing you mini bitesized kebabs made from chicken mince/keema. These are versatile, delicious morsels of flavour that can be served as a quick snack for children/guests or can be used in full meals by putting into tortillas or chapattis, or add them to a curry sauce to make a tasty kofte curry.

To make these, i used:

500g chicken mince/keema
2 medium onions
1/2 green capsicum
2 tbsp finely grated ginger and garlic
3 green chillies
2 slices bread, blitzed into breadcrumbs
1 tsp turmeric powder
1 tsp hot madras curry powder
1 tsp cumin powder
1 tsp Bolsts hot curry powder
1/2 tsp chilli powder
1/2 tsp garam masala powder
1/2 tsp paprika
2 tbsp chilli flakes
Salt to taste
Chopped coriander

In a blender/food processor, add the bread and blend into fine breadcrumbs. Put to one side. Then in the blender, put in the onions, capsicum and green chillies and blend until you have a coarse paste.

Place the paste in a bowl, then add all the spices, garlic and ginger, salt and coriander. Mix well until all ingredients have incorporated together, then add chicken mince. Using your hands mix the mixture until ingredients are evenly distributed.

The mix may seem a little wet, but add the breadcrumbs at this point to bind together. Mix until breadcrumbs have blended in.

Put a non stick pan on on low heat and brush a little oil all over. Once oil is hot, grab a small bit of the mix and shape into bite sized patties. Place in oil and wait until a brown, caramelised finish has formed, then turn over and wait for other side to brown and caramelise.

Chicken mince cooks quickly so keep an eye on them, otherwise they turn black. Serve hot, or put in foil to remain warm.
