Ayna (Sheem) Uri Baazi

I always like having a side dish when eating, be it every day cooking or daawats. A Baazi (a vegetable stir fry) was one of the first things I 'mastered' cooking, back when my meat curries and chicken curries were very amateurish.

This simple recipe is one of sheem or ayna uri's which taste delicious on their own or accompanying meat or fish.

For this recipe, I used:

2 tbsp. oil
2 onions, finely sliced
5 green chillies, cut in half
Salt to taste
1 tsp. Turmeric powder
2 tsp. Mixed curry powder
1 tsp. Cumin powder
300g Ayna uri, finely sliced
Coriander for garnishing

In a frying pan, add your oil, onions, chillies and salt. Stir fry on a medium heat for about 5-7 minutes until onions have softened. Add the spices, and mix well. Fry for 5 minutes, adding a little bit of water if the onions are sticking.

Once oil has separated from the spices, add your green beans and stir very well. Cover and cook on a medium heat for about 10 - 15 minutes, again stirring regularly and adding water if required, until beans are fully cooked. Once cooked, take off heat and garnish with coriander. Serve immediately with rice.

If you get bored, you can change this up and add finely match sticked potatoes to make a aloo-uri baazi. Lush.
