Aloo Gobi

Recently whilst scouring through recipes i kept coming across a few aloo gobi ones and as i had the ingredients in my fridge, i thought i would give it a go.

Ingredients:

10 baby potatoes, skin on, cut into bitesized pieces
1 cauliflower, cut into florets the same size as potatoes
Pinch of turmeric
1 tbsp. Sunflower oil for frying potatoes and cauliflower
3 tbsp. Sunflower oil for cooking
Pinch of cumin seeds
1 black cardamom
1 tbsp. Minced ginger and garlic
1 medium onion, finely chopped
8 - 9 curry leaves (optional)
1 chopped tomato
Salt to taste
1/4 tsp. Turmeric powder
1 and 1/2 tsp. Kashmiri red chilli powder
1 tsp. Cumin powder
1 tsp. Coriander powder
6 green chillies
1/2 tsp. Garam masala
Pinch of amchoor powder (dried mango powder)
Chopped coriander to garnish

I cut the baby potatoes into bite sized pieces and put in a microwaveable bowl and covered with water. I put it in the microwave for a quick blast of 5 minutes to parboil the potatoes.

Then i got a cauliflower and cut into florets the same size as potato pieces.

In a frying pan, pour a little oil and fry the cauliflower and potatoes until golden brown. You can do this together or seperately depending in size of your frying pan. I added a pinch of turmeric to the cauliflower for some colour. Once done, put to one side.

In another pan/wok, put in the oil and heat up the cumin seeds and add the black cardamom. Then i added the minced ginger and garlic and fried until brown. Add finely chopped onions and brown those for about 10 minutes until golden and soft. Put in salt to taste, curry leaves and the chopped tomato, stir, cover and cook until tomatoes turn mushy and oil seperates at the sides.

Add the turmeric powder, kashmiri red chilli powder, cumin powder and coriander powder and mix well. Add a little water so spices don't burn and cook for 2 minutes. Add your green chillies and stir well.

Then add your potatoes and cauliflower, stir, cover and cook for 5 minutes before adding a cup of water. Cook this for 15 minutes until the water has evaporated and you are left with a dry curry and your potatoes and cauliflower are completely cooked.

Sprinkle the garam masala and amchoor powder on top and garnish with chopped coriander.

As this is a dry curry, i served with a thin daal and ate it with roti.
