Baby Chicken and Moong Daal Bhuna

As per my last post, this recipe is the first of many to come, which is easier for a beginner to start cooking.

It will be easier for you to cook if you have a relatively well stocked spice cupboard, but if not, don't worry, you can omit what you don't have from the recipe. The main whole spices that you must have (in my opinion) is cinnamon sticks, bay leaves, green cardamoms, cloves, peppercorns and cumin seeds.

So on with the recipe, which instead of cooking two different curries, a chicken bhuna and moong daal (split green gram lentil), we will be combining the two to make a one pot dish!

For this i used:

150g moong daal (wash and soak for an hour)
3 tbsp oil
1/4 tsp cumin seeds
1/8 tsp fennel seeds
4 cardamoms
1 cinnamon stick
3 bay leaves
4 peppercorns
4 cloves
8 cloves of garlic, minced
1 1/2 inch piece of ginger, grated
2 onions, finely sliced
Salt to taste
1 green capsicum, finely chopped
1 chopped tomato
Chopped coriander
2 tbsp curry powder (I used Bolsts Hot curry powder)
1/2 tbsp turmeric powder
1 tbsp chilli powder
1 tsp coriander powder
1 tsp cumin powder
1/2 tsp paprika (optional)
1 baby chicken, curry cut
Coriander to garnish
Chillies to garnish

Pre soak your moong daal about an hour before you cook.

In a saucepan, heat your oil. Add your whole spices (cumin seeds, fennel seeds, cardamoms, cinnamon stick, bay leaves, peppercorns, cloves) and once infused, add your garlic and ginger.

Once browned, add your onions, salt, capsicum, chopped tomato and coriander. Fry until soft and brown.

To this add all your powdered spices, a little water and fry on low heat until the oil seperates. Keep adding a little bit of water so the spices don't stick to the pan.

Add your chicken and moong dal to the pan and stir well. Lower the heat, cover and cook for about 30 minutes, checking frequently as the daal can get stuck to the bottom of the pan. Add water according to how much sauce you would like. I made it medium saucy, so it covered the chicken about 3/4 of the way.

Once chicken and daal is fully cooked, garnish with coriander and chillies. And that's it! Serve with rice, or paratha (as i will be doing tomorrow).
